Fredrick Joseph Carlo

It is with great sadness that we share the sudden passing of Fredrick Joseph Carlo of McMinnville, OR, on January 30,2023. Fred was born on March 9,1950 to Helen (Yoffredo) and Edward Carlo. He was predeceased by his parents, brother Ed, and sister Carolyn (Vandetta). He is survived by sisters Claire (Rick)Safe and Mary ‘Maria’ Carlo (Windsor Wade), uncle Bernie Yoffredo, nephew Shawn (Andrea) Lischer, as well as several cousins, great nieces and nephews, and a beloved community of friends.

Fred was active in sports at Holley High School, graduating in 1968, and designated by the Yearbook staff as the guy with ‘the mischievous twinkle in his eye’. After an extended European trip, he moved to the Northwest, settling in Portland, where he became a pioneer in the region’s culinary scene. His business, Salumeria di Carlo, produced prosciutto and several varieties of Italian sausage inspired by his grandparents and his multiple trips to Italy, His sausage sandwiches became a must-have at Portland’s Farmers Market.

Fred always joked that his four greatest passions were red wine, pork, baseball, and women. We can also add the Oregon Coast, the Metolious River, and everything about Italy, his favorite city being Florence. It was in Tuscany that he apprenticed under Dario Cecchini, a renowned Italian butcher

We will forever remember Fred for his big heart, his generous table that created new and lasting friendships, his storytelling, and sense of humor. His laughter will remain forever in the hearts of all who knew him.

A Celebration of Fred’s Life will be held at a later date.
